I went to a Farmers Stand yesterday–$25.00 later I had so much fresh produce I had no where to store it. We had fabulous green beans and corn on the cob last night. Tonight we are having Eggplant Parmesan. I love this dish. This recipe is so simple. I have adapted this to make it Paleo friendly and gluten free. Enjoy!
