This is a great way to use cauliflower. I have stayed away from cauliflower because it can be very expensive. I found Mauri-1large heads of cauliflower for $1.50 a head at a local farm market. You will be able to make 2 large pizza crusts from 1 head of cauliflower. It is easier to work with than zucchini and I like the taste better. Try this and let me know what you think.

Cauliflower Pizza Crust

2 to 2 1/2 cups of cauliflower (grated)
2 large eggs
1 1/4 cups shredded mozzarella cheese
2 Tablespoons grated Parmesan cheese
1/2 teaspoon ground pepper
2 Tablespoons Extra Virgin Olive Oil

Pre-heat oven to 425 degrees.

Put grated cauliflower in a large bowl and microwave for 7 minutes. Cauliflower will be soft. Let the Cauliflower cool. Take a cookie sheet with a lip and cover it with parchment paper.cauliflower-pizza-crust-1

Mix all ingredients with the cauliflower and smooth out on the parchment paper. You will have a 10 to 12 inch pizza. Make a lip around the edge of the pizza. Spread the Extra Virgin Olive Oil on the top of the Pizza crust. Put the crust in the oven and cook for 12 to 14 minutes. Crust will be brown.

Top with your favorite toppings. I used Pizza Sauce and covered the pizza. I also put cooked ground, Italian Sausage, diced green peppers and covered this with Mozzarella cheese.

I put the pizza with the toppings back in the oven and cooked for an additional 12 minutes. The cheese will be cauliflower-pizza-crust-2bubbling and brown.

This is a great way to use the cauliflower that is still available at the farmer’s stands around town.
