Eggplant Parmesan/Lasagna

I don’t know why I have been on such an Italian kick lately. It really doesn’t take much to put me in the mood for Italian cooking. Eggplant Parmesan

I went to a Farmers Stand yesterday–$25.00 later I had so much fresh produce I had no where to store it.  We had fabulous green beans and corn on the cob last night.  Tonight we are having Eggplant Parmesan.  I love this dish.  This recipe is so simple.  I have adapted this to make it Paleo friendly and gluten free.  Enjoy![amd-zlrecipe-recipe:22]
