My friend, Katherine Miracle, has asked me to coach her on the Paleo lifestyle. We all learn from each other so I am asking you to share something that will be helpful for Katherine and anyone else that might want to look into this life style. Mark’s Daily Apple is an excellent resource. There are great recipes and good advice. Today I am sharing a new
favorite of mine. I eat this for breakfast and I positively love it. Cooking the bacon in the oven is a great way to always make sure you have bacon for breakfast, salads and afternoon snacks.
Oven Bacon
1 pound of sliced bacon (available at your local meat market)
Preheat oven to 400 degrees. Put parchment paper on a cookie sheet that has an edge of at least 1 inch. Place the sliced bacon single file on the parchment paper. place the cookie sheet on a center rack in the oven and cook for 18 to 20 minutes. The bacon will be really crisp. Carefully remove the bacon from the parchment
paper and place on paper towels to drain.
Take an apple of your choice (I like red delicious apples). Slice the apple. Put Almond Butter on the apple and top with the crisp bacon. Take a bite. You will love the way the favors complement one another. This is absolutely delicious for breakfast or an afternoon snack. It is totally Paleo friendly.
