I am feeling melancholy today.  I don’t know why.  It is a beautiful summer day.  Maybe it is the realization that summer is going by so fast.  Then I stop and think how many summers have already gone by and thinking that maybe life is going fast as well.  I don’t intend for this to be a downer.  I just want to remind you to grab every moment.

Fair season is in full swing.  I am going to challenge you (and me too) to go to one of the fairs and act like a kid again.  Since we are on the fair theme this week, I thought I would share an easy meal that is a fair favorite.  It is so easy to make.

 

Sausage and Pepper

3 pounds of Hot Italian Sausage (or mild Italian Sausage) (available at your local butcher shop)
4 Tablespoons of Extra Virgin Olive Oil
4 green, red, or yellow peppers (mix and match)
2 large sweet onions
Core the peppers and cut them into strips.  Slice up the onions.  Heat 2 iron skillets on the stove over medium heat.  Add 2 Tablespoons of Extra Virgin Olive Oil to each skillet.
Add peppers and onions to the skillets and cook for about 15 minutes.  Combine the peppers and onions into one pan and keep warm.  Take the skillets and fry the sausage browning on all sides.  Reduce the heat to low.  Put a lid on the skillets cook for 30 minutes.  If needed add a small amount of liquid with the sausage so it doesn’t burn or dry out.  
Serve the Sausage on sausage rolls (available at your local meat market) smothered with cooked peppers and onions.  This will taste great long after the fairs have gone.
