When you are on the Paleo Lifestyle you need to be a little creative, and creative can be good.  I wanted pasta.  The sauce wasn’t Mauri-1the problem–finding “noodles” was the challenge.  Enter Spaghetti squash.  This amazing vegetable makes the perfect “Angel Hair” pasta and is wonderful with any topping.

This is so simple, I feel guilty for using this for a blog subject.  Well, not really guilty because I do get pleasure in sharing quick, easy and delicious recipes with you.  I think this is one you will enjoy and use even if you aren’t eating Paleo.

Start with a spaghetti squash.  They are yellow and oval in shape.  Preheat your oven to 375 degrees.  Take a knife and make several slits in the squash.  Place the squash in a dish and put it in the oven.  Cook the spaghetti squash for 1 hour.

Spaghetti Squash Remove the squash from the oven and allow to cool for 30 minutes.  Put on oven mitts and cut the spaghetti squash in two (around the center).  Scoop out the seeds and discard.  spoon out the squash which will come out in perfect “spaghetti” lengths.  Use with Marinara, or meat sauce. For extra flavor, put a tablespoon of Extra Virgin Olive Oil and mix with the Spaghetti Squash. Refrigerate the unused portion for a quick lunch or dinner.

A quick  dinner is just what we need on these beautiful summer nights.  Remember to take the time to smell the flowers.
