The apples are absolutely delicious right now.  My favorite orchards are Rittman Orchards  and Bauman Orchards.  You can even pick your own apples.  I haven’t been able to talk the Butcher into this yet but I’m still hoping.  I had some apples and I decided to make this cake.  It is a definite winner!  The cream cheese frosting is the “icing on the cake”.

German Apple Cake

3 large eggs
2 cups sugar
1 cup applesauce (or oil)
1 teaspoon vanilla
2 cups flour
2 1/2 teaspoons of ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
4 cups peeled and finely chopped tart apples
1 cup chopped walnuts (or pecans)


1) 8 oz. package cream cheese
2 Tablespoons butter, softened
1 teaspoon vanilla extract
1 Tablespoon half and half
2 cups confectioners sugar

Preheat oven to 350 degrees. Spray a 9″ X 13″ glass pan with cooking spray. In a large bowl whisk together sugar, applesauce, vanilla and eggs.  In another bowl mix together flour, cinnamon, baking soda and salt. Add dry ingredients to wet and stir to combine. Fold in apples and walnuts (pecans) and stir to combine. Pour batter in prepared pan. Bake 50 to 55 minutes until a toothpick inserted in the center comes out clean.

Put softened cream cheese and softened butter in a bowl and beat with an electric mixer until smooth. Add vanilla, half and half and confectioners sugar until smooth. When cake is completely cool frost the German Apple Cake with the cream cheese frosting.

Store any leftover cake in the refrigerator. This was a hit with our family and I hope it will be with your family as well.
