In the summer you don’t always feel like cooking–okay, I’ll admit it, this can happen at other times of the year as IMG_8114rwell. It’s always good to have a “go to” meal to keep you from eating something you shouldn’t. I hadn’t made tuna salad for years. I made it this past week-end and I was amazed at how good it tasted. I loaded it with fresh fruits and vegetables so I felt like it was healthy. This recipe can be easily adjusted to suit your taste.

Tuna Fish Salad

24 oz. of chunk light tuna
1/2 small onion, diced
20 bread and butter pickles diced
1 apple, diced (leave the skin on for additional nutrients)
20 seedless green grapes (or purple grapes) sliced
4 to 5 Tablespoons mayonnaiseTuna Salad

Mix all ingredients together. You can take a fresh tomato, quarter it and serve the tuna salad on the tomato. You can also use whole grain bread, or pretzel bread for a special treat.

Summer is winding down. Enjoy these beautiful sunny days while they are here. As for me, I am going out to play some tennis.
