I have to confess, doing a food blog today is one of the last things on my mind. I am cleaning out the kitchen cabinets. I must confess this gets
done less often than I care to admit. While I was cleaning out the cabinets I came across 16 ounces of Wilbur White Confectionery Wafers. I had whole cashews from Dannemiller Nut Company and I knew I was in business. This is so easy, you can have tasty treats in 5 minutes. They are sure to be a big hit!
Chocolate covered cashew clusters
1 pound of Wilbur White Confectionery Wafers (you can substitute milk chocolate or dark chocolate wafers)
1 pound of Whole Cashews (you can also use almonds or peanuts)
Put 1/2 of the wafers in a microwave safe bowl. Microwave on high for 30 seconds, remove from the microwave and stir, repeat process until you are able to easily mix up the melted discs. It took me 3 times in my microwave. The bowl will be very hot so make sure you wear gloves as you are
handling the bowl and stirring the discs. Stir in half of the cashews. Mix thoroughly. Drop rounded spoonfuls onto waxed paper or in candy cups and allow to cool and set up.
Repeat above instructions with the remaining discs and cashews. After these are cooled store in an airtight container. You won’t have to worry about these going stale before you eat them all. I am predicting ours will be gone before the week-end is over.
Now, back to those cabinets–who knows what else I might find!
