This week-end was very heart warming for me.  I got to see my mom who is in Ohio Mauri-1from Texas.  I also got to be in on a surprise 60th birthday party for my sister, and I got to see my brother from Indianapolis.  The first thing I noticed about my brother was that he had lost weight and looked great.  I asked my sister-in-law, Lin about it and she said since the first of the year he has been eating grilled meat and salads.  I thought, I can live on that.

On Sunday, I had the Butcher bring home some Boneless, Skinless Chicken Breasts.  Those of you that know me, know that I am not good about marinating ahead, and actually planning a menu.  I don’t want to give you any false expectations, “I came, I saw, I conquered”, is my motto for cooking.  The Butcher brought home the chicken breasts and got the charcoal ready in the Weber grill.  I took my faithful Blackened Seasoning, and coated one side of the chicken breasts.  After the charcoal was ready (about 30 minutes after lighting) I put the chicken breasts seasoned side down on the grate.  I but blackened seasoning on the other photo (25)side.  I let them cook about 7 minutes, and then flipped them and cooked an additional 7 minutes.  I believe in flipping every 5 minutes.  I let the chicken breasts cook for approximately 40 minutes.  They were delicious and juicy.  I made 4 whole breasts cut in half.  We had 8 pieces of chicken breast.

The next day we had the leftover grilled chicken on our salad.  It was delicious.  Always cook extra so the next day you have an easy breezy meal.photo (24)

Also, Deb Adams, is trying for the customer of the year award.  She brought me fresh blueberries that she had canned.  I am one spoiled woman.
