Sometimes, you have to go back to the basics.  Ask any ball player.  You have to have the fundamentals before you can go to the next level.  How about Barbecue 101?  It doesn’t get any easier–or better than this! IMG_8114r

 

Barbecue Chicken

3 whole bone-in chicken breasts (cut in half) Your local butcher shop will be glad to do this
2 Tablespoons Chicken Barbecue Rub (You may need more–I like to put this on pretty heavy)
Walnut Creek Applebutter Barbecue sauce

First you light the grill. I am a charcoal girl so I got my Weber Rapid Fire Charcoal Starter.  I just got one this year and I am hooked.  If you click Chicken on the Grillon the highlighted link you will get detailed instructions on how to use this marvel.  I let my coals burn for 20 to 25 minutes.  I dump the coals in the grill and put the grill grate on top of the hot coals.  I put a heavy rub of the Chicken Barbecue on the skin side of the chicken breast and put the chicken breast skin down on the grill.  I shake a heavy amount of the Chicken Barbecue rub on the underside of the chicken breast.  I let the breasts cook for 15 minutes and then I flip the breasts.  I cook for an additional 15 minutes.  I then flip the chicken breasts again.  They are once again skin side down on the grill.  I put the lid on the grill with the vents open and cook for an additional 35 minutes.

I remove the chicken from the grill and serve with barbecue sauce.  You are going to enjoy some great tasting barbecue.
