Mexican Market

Today we had a great adventure. We went to a Farmers’ Market in Jarretaderas. This is a neighboring colony to Nuevo Vallarta.  They have their market every Tuesday and it brings everyone together. I enjoyed watching the locals pick out their tomatoes, limes and pineapples. The items we purchased included avocados, peppers, onions, pineapples, tomatoes, bananas, mangos, jalapeños, cilantro, strawberries and lettuce. Eggplant Parmesan

I went to a Farmers Stand yesterday–$25.00 later I had so much fresh produce I had no where to store it.  We had fabulous green beans and corn on the cob last night.  Tonight we are having Eggplant Parmesan.  I love this dish.  This recipe is so simple.  I have adapted this to make it Paleo friendly and gluten free.  Enjoy![amd-zlrecipe-recipe:22]
