Well, now that Thanksgiving is a fond memory, and Ohio State has beaten
Michigan to retain their undefeated streak, (I didn’t say it was a pretty win) I decided to write a bonus blog this week. Many of you are wanting help on what to do with that leftover bird and fixings. This is what the Butcher and I are having for dinner tonight. I am just glad we aren’t eating crow. Enjoy the rest of the week-end.
Leftover Turkey Casserole
2 1/2 cups of prepared mashed potatoes
2 cups cooked shredded turkey
1 1/2 cups of turkey gravy
1 cup prepared stuffing
Spray a 2 quart casserole dish with cooking spray and put the mashed potatoes in the bottom of the casserole dish. Mix the turkey, gravy and stuffing. Put this on top of the mashed potatoes. Put the lid on the casserole dish and bake in the preheated oven for 25 to 30 minutes. Casserole should be bubbling and thoroughly heated through.
