Well here it is, Saturday morning, and I hadn’t posted my blog yet. I have ideas. My
problem is photos–or lack of them. If you follow Mike Vrobel, www.dadcooksdinner.com, (I recommend you do) you will see the most amazing photos. I make a dinner, I dig in and then I realize I haven’t photographed it yet. Oh well, I just need to be the best I can be and accept my downfalls. One thing I will bring you is fast easy delicious meals. Today I am going to give you an appetizer. We had our Tennis Banquet last night. It was a potluck at 6:30. Since we are open until 6:00 that didn’t leave me a lot of time to get something together. I did sneak out at 5:40. This is the appetizer I took. Put a salad with it and you have dinner. Without further ado here is the recipe.
Mexican Appetizer
1 pound of ground beef
1 package of taco seasoning mix
1 15 oz. can of refried beans
1 8 oz. container of sour cream
1 12 oz. jar of taco sauce 
2 cups of shredded Mexican Cheese
Brown the ground beef and drain off excess grease. Add Taco seasoning packet and follow packet directions. Mix the refried beans in with the meat mixture. Put the meat mixture in the bottom of a 9″ X 13″ pan. Put the sour cream on top of the meat mixture.
Drizzle the taco sauce on top of the sour cream. Put the Mexican Cheese on top. Bake this in a preheated oven at 350 degrees for 20 minutes.
Serve this with Tortilla chips. It will be a big hit.
