I hope you are enjoying summer as much as I am. Summer should be swimming, soaking up sunshine and simple. I have something simple to share in my blog today. It is just what the doctor ordered (or in this case, the Butcher). We love the Butcher’s burgers on the grille. I always grill plenty so we have leftovers. For this recipe you are starting with cooked burgers. You can take it from here. Get your square burger patties from your local Butcher shop. Cook them (grill, broil, or pan fry). Now you are ready to proceed.
Simple South of the Border Burgers
6 cooked burger patties
1/2 can of Enchilada sauce (your preference)
8 ounces of shredded Mexican Cheese (more if you like)
Diced onions and diced tomatoes for toppings
Set the broiler on Broil/High. Cover your broiler pan with foil. Place the patties on the broiler pan. Spoon on the enchilada sauce and then top with the cheese. Place the broiler pan about 3 inches from the heated broiler. Broil for about 5 minutes or until burgers are hot and the cheese is melted.
Top with diced onions and tomatoes.
You can serve with a salad, cantaloupe, or any of the plentiful summer vegetables available at the Farmer’s Markets around us.
