I have had the occasion to use this casserole twice in the last 3 weeks, and will be

using it again this Tuesday morning.  A breakfast casserole is a great way to entertain for a breakfast or brunch, and have all the busy work done the night before.

 

Breakfast Casserole Ingredients

12 oz. cooked sausage, bacon, or smoked ham8 eggs beaten

2 cups of milk

1/2 cup of chopped onion

1/2 cup of chopped green onion (optional)

6 slices bread, cubed, crust removed

1 1/2 cups shredded taco cheese (or your favorite)

Grease a 9 X 13 inch glass pan.  Mix all ingredients by hand, pour into baking pan.  Cover with foil and refrigerate overnight.  Bake at 350 degrees for 35 to 40 minutes.  Note:  if you are making 2 pans at the same time, increase the cooking time to 45 to 55 minutes.
