When you are eating Paleo you sometimes feel like you have to give up some of the good things in life. I know I could just “cheat”. Who would know–right? My body would know. I googled Paleo ice-cream and I found a recipe. I couldn’t wait to try it. I found it delicious and can’t wait to make my second batch. I will be trying many different combinations.
Paleo Ice Cream
1 can coconut milk
2 eggs or 4 egg yolks
4 Tablespoons of Pure Vanilla
3 Tablespoons of honey
Boil water in a roaster pan and reduce to simmer. Place heatproof bowl over the water in a double boiler fashion and pour in the coconut milk. Add the
vanilla. Heat until hot, but not boiling. Whisk eggs in a separate bowl. Add 1 ladle-full of hot milk mixture to the eggs while whisking vigorously (tempering eggs without cooking the eggs). Add 2 or 3 more ladle-fulls of the milk mixture to the eggs and continue to whisk vigorously. Take the tempered eggs and whisk into the bowl with the rest of the coconut milk mixture in the double boiler. Whisk for a couple of minutes nonstop to make a thick custard. Make sure it doesn’t get too hot and the simmering water doesn’t touch the bowl. Once the custard is ready remove from the heat, add the honey and let it cool in the refrigerator. Follow ice cream freezer instructions or put the ice cream mixture in a freezer safe baking dish and place in the freezer. Stir vigorously every 30 minutes until the ice cream is set. This will take about 2 hours.
You can also add honey sweetened fruit to the ice cream mixture. I put whole cherries in mine. The next night I made a milk shake by adding Almond Milk and mixing in a blender. It was delicious.
