It’s chilly, and you want to eat “stick to your ribs” meals but you don’t want to spend all of your time in the kitchen. The answer is a slow cooker. The slow cooker will do all the work and blend the flavors in a way that you aren’t able to do.  I hope you enjoy this recipe for pork tenderloinMauri-1 in your slow cooker.

Balsamic Brown Sugar Pork Tenderloin

  • 2 lbs lean pork tenderloin (or trimmed pork loin–available at your local meat market)
  • 1/4 cup balsamic vinegar
  • 1/2 cup low sodium chicken broth
  • 2 tbsp soy sauce
  • 3 tbsp brown sugar (or honey/maple syrup or Stevia for low carb)
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder (or granulated garlic)
  • 1/4 tsp chili powder (or more to taste)
  1. Combine the vinegar, chicken broth, and soy sauce.
  2. Combine the brown sugar, cumin, garlic powder, chili powder.
  3. Rub the pork with the brown sugar mixture and place in the slow cooker. Pour vinegar mixture over top.pork in the crock pot
  4. Cook on low for 6-8 hours until very tender.
  5. If desired top with balsamic glaze or reduce the cooking liquid to create your own glaze.
